Don't be intimidated!!! Cooking a whole chicken is much easier than it seems. And we are here today to teach you the WHOLE CHICKEN ROAST recipe that too without using Oven. So, let's get started.
Preparation Time: 15 minutes
Refrigerate: 24 hours
Cooking Time: 1 hour 15 minutes
INGREDIENTS:
Chicken - 1 kg or 1 whole fryer chicken
Masala mix:
Curd or Dahi - 6 tablespoon
Jeera powder - 1 tablespoon
Black pepper powder - 1 teaspoon
Salt - As per taste
Dalchini powder - 1 teaspoon
Haldi - 1 teaspoon
Kashmiri Mirchi Powder - 1 teaspoon
Chaat Masala - 1 teaspoon
Meat masala - 1 tablespoon
Food color(optional) - 1 teaspoon
Squeeze 1/2 medium-sized lemon
Remove unwanted lemon seeds
For roasting:
Cooking Oil - 1/2 litre
INSTRUCTIONS:
STAGE1: MARINATING THE CHICKEN:
1. Make deep cuts in the entire chicken body so that the masala we make goes inside
Chicken - 1kg
2. Secure all the detached parts with a thread
3. Prepare the masala mix. Ingredients listed above.
4. Spread the masala mix all over the chicken
5. Pinch the thick areas so that the masala enters properly
STAGE2: REFRIGERATE FOR 24 HOURS
STAGE3: STEAM FOR 45 MINUTES
1. Spread 1 tablespoon cooking oil on the plate you would place the chicken
2. Place the refrigerated chicken on the plate
2. Steam for 45 minutes
3. Steaming is complete when it's soft
STAGE4: ROAST THE CHICKEN
1. Heat a wide mouth pan
Cooking Oil - 1/2 litre
2. Wait till the oil heats
3. Fry for 20-25 minutes
4. Turn upside down as required
5. It's ready when it turns golden brownish
Serve it with thinly chopped onions and pudina chutney
